These hot honey salmon tacos with a spicy mango avocado salsa are easy to make and taste so good! Scale up the recipe as needed and serve any leftover salmon and salsa with rice for a delicious speedy supper!

Hot Honey Salmon Tacos

Serves: 2

Ingredients

  • 2 salmon fillets, cut into cubes
  • 1/2 tsp cayenne pepper
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • A drizzle of hot honey
  • A drizzle of olive oil
  • A pinch of salt & pepper
Salsa
  • 1 cup mango, diced
  • 1 cup avocado, diced
  • 1/2 cup fresh coriander, chopped
  • 1/3 cup red onion, diced
  • 1/2 jalapeño, finely chopped
  • The juice of 1 lime
  • Salt & pepper
To serve
  • 6 soft tacos

Instructions

  1. Add all of the ingredients for the mango salsa to a bowl and mix together.
  2. Toss the cubes of salmon with the spices, olive oil, hot honey, salt & pepper.
  3. Pan fry the salmon in a drizzle of olive oil until golden on all sides and cooked through.
  4. Warm the tacos in the oven or on a pan.
  5. Top the warm tacos with the mango salsa and cubes of salmon. Drizzle over some more hot honey and enjoy!
