My mum has been making this for breakfast recently and I am obsessed - although it’s served chilled there’s something so comforting about the creamy oats and I love playing around with the toppings. It keeps in the fridge for a couple of days so it’s a great one to make on a Sunday evening ahead of a busy week!

Serves: 2

Ingredients

  • 100g porridge oats (my mum uses the 5 grain 5 seed porridge mix from Rude Health)
  • 130ml milk
  • 50ml apple juice
  • 75ml yoghurt
  • A squeeze of lemon juice
  • Pinch of salt
  • A squeeze of honey (to taste)
  • 30g raisins
  • 1 small Granny Smith apple, grated
  • Toppings: I love blackberries, pistachios and toasted coconut flakes. I also sometimes sprinkle over milled flaxseeds or chia seeds for an extra boost of goodness!

Instructions

  1. Add all of the ingredients to a bowl and stir together.
  2. Leave in the fridge overnight and enjoy for breakfast with whatever toppings you fancy!
